Our delicious Elisen-Lebkuchen are available in organic and non-organic quality – just like our crispbread. They are baked without any flour – but they are not free of gluten. Handmade by our master bakers with high quality ingredients and a high percentage of nuts. A delight for every gourmet! And just the perfect »TOP-of-the-line«-product for demanding customers.


Franconian Elisen-Lebkuchen

Our bakery is situated in a small town just south of Nuremberg. As we are not based within the Nuremberg district, we are not allowed to call our Lebkuchen »Nürnberger Lebkuchen«.

But nevertheless, our Elisen Lebkuchen taste delicious anyway!

The history of Elisen-Lebkuchen

The history of Elisen-Lebkuchen goes back to medieval times. Back then, due to long, arduous routes of transport the ingredients especially exotic spices were luxury goods. Thus, Elisen-Lebkuchen were considered as an expensive delicacy.

Elisen-Lebkuchen owe their name to the beautiful daughter of a »Lebzelter« and are a masterpiece of the guild since 1808. At »Fränkische Dorfbäckerei Karg«, this unique pastry is handmade according to an old family recipe.

It succeeds the strict regulations for Elisen-Lebkuchen. Thus, no flour is used although 10% would be allowed. The percentage of hazelnuts and almonds exceeds the required 25% considerably. Even though our Elisen-Lebkuchen are made without flour, they are not free of gluten.

Ingredients: hazelnuts (22 %), marzipan (sugar, almonds, invert sugar, water, humectant [E420, E1102], glucose syrup), sugar, candied orange peel (orange peel, glucose-fructose syrup, sugar, acidifier [E330]), almonds (9 %), candied lemon peel (lemon peel, glukose-fructose syrup, sugar, acidifier [E330]), apricot jam (dried apricots, glucose syrup), glucose syrup, mix of egg-white, honey, Lebkuchen spices, baking agent, cocoa, couverture, wafers; Contains eggs, gluten, hazelnuts, almonds, soy.

Delicious Organic Elisen-Lebkuchen

Ingredients: hazelnuts* (21 %), marzipan* (almonds*, raw cane sugar*, water), raw cane sugar*, almonds* (9 %), candied lemon peel* (lemon peel*, corn syrup*), candied orange peel* (orange peel*, corn syrup*), apricot jam* (raw cane sugar*, apricot puree*, citric acid, gelling agent pectin), honey*, egg white*, couverture*, Lebkuchen spices*, cream of tartar, cocoa*, natural cinnamon flavour, wafers* (*= organic ingredients); Contains gluten, eggs, hazelnuts and almonds.




Finest spices such as ginger, cardamom, cinnamon and mace, marzipan, honey and candied fruits contribute that the Elisen-Lebkuchen becomes a fluffy delicacy with a unique aromatic taste.

  • The dough contains at least 25% almonds and/or hazelnuts and/or walnuts.
